Coffee from Cajamarca is typically grown at high elevations by smallholder farmers working within cooperative systems. Production often follows organic practices, supported by certifications such as Organic and Fairtrade. After harvest and initial processing, this coffee undergoes decaffeination using the CO₂ method. In this process, pressurized carbon dioxide is used to selectively extract caffeine from green beans while maintaining structural integrity. Unlike solvent-based methods, CO₂ decaffeination allows for a more controlled and selective extraction. This approach is widely used for higher-quality decaffeinated coffees and is considered one of the most technologically advanced decaffeination techniques available.

This lot is processed using a fully washed method, a less common approach for Robusta that requires careful post-harvest management. After depulping, the coffee undergoes controlled fermentation, thorough washing, and slow drying on raised beds to ensure uniform moisture levels. This process improves consistency and reduces common defects, resulting in a cleaner and reliable product.
